Description: Yamada Kogyosho Iron Hammered One-Handed Wok Thickness 1.2mm 24cm Description Condition: New Yamada Kogyosho Iron Hammered One-Handed Wok (Thickness 1.2mm) 24cm Yamada Kogyosho woks are made by a process called "Uchidashi", in which each wok is tapped thousands of times with a hammer (machine). The wok is then turned by hand using a special machine equipped with a hammer and tapped over and over again to form the shape of the wok. Since each product is individually handmade by the hammered-out process, each product may have minor scratches, welding marks, scuff marks, etc. During the production process, the surface of the product may have marks left over from the manufacturing process, which may look like scratches at first. Also, when welding the handle part, the process involves a high heat treatment, which may cause color differences and peeling of the black skin. ●*Be sure to perform a blank firing before using the product for the first time. As it is called "emptying the pan," place the pan on the stove and turn on the heat without adding any ingredients. Do not leave the pot unattended. Make sure to grill the food evenly all the way to the edge of the pan. When the surface of the pan starts to darken and then turns gray, it is done. When the temperature of the pot drops a little, wash it with hot water using a scrubbing brush. (You can also use detergent.) If you use a steel scrubber, it will scratch the surface. Next, level the pot with oil. Add more oil to the pan and fry the vegetable scraps. Do this all over the pot. Discard the vegetable scraps and rinse the pot with hot water before use. The handle will be hot, so do not hold it directly, wrap a towel around it and be careful not to let the towel catch fire. About care* ●● When you are finished cooking, wash the pot with Tawashi. After cooking, wash the pot with a scrubbing brush and hot water. If the pot is burnt, please scrub it with a steel scrubber. It is easier to remove burnt residue if the pot is dipped in hot water while there is still a little residual heat in the pot. After that, remove the water completely from the pot and store it with oil. Failure to do so may cause the pot to rust. In order to completely remove the water from the pot, it is recommended to heat the pot on the stove for a little while to remove the water, but be careful not to burn yourself when applying the oil. Please apply oil to the back of the pot after it cools down a little. If rust has formed, you can remove it by rubbing with fine-grained paper, but the rubbed area will easily become burnt, so please apply oil over a stove flame once (the area that has been rubbed will turn bluish).
