A little about the process: The sugaring season begins each year in late January and can continue through March. Much of the season is dependent on the past years weather and rainfall which dictates the sugar content of the sap flow. Shaker Meadow taps and collects sap the old fashioned way. We pay close attention to the weather and tap our trees when the time is just right to let the Maple trees donate some of their splendor to us. (below 32 at night, above during the day) We collect the sap in buckets and by gravity in tubing, but no expensive equipment to suck the sap from the tree. We are perfectly happy with what the tree is willing to give to us each year, whether a lot or a little, its all tasty to us. All the sap is stored and is boiled down batch by batch. No blending of old sap thats been sitting around for days on end like some commercial makers do. We batch boil on a homemade burning barrel, using a wood fire and a porcelain pot that has been handed down for at least 100 years as far as we’ve been able to figure. Because we batch boil each batch is a little different from the last, some darker, some lighter, some a little more viscous than the previous, what we do guarantee is that it all is the most delicious maple syrup you will ever have. When each batch is boiled down to the right moment on the fire it is double filtered and then finished on the electric stove then packaged in sterilized mason jars. What you are purchasing: For sale here are three different sized containers of our maple syrup. 32 oz, 16 oz and 8 oz containers. The grade varies and truly is not important to us, nor should it be to you. Many many maple connisours will tell you that grade B, while one would think grade a is better when it comes to maple syrup the darkest and thickest syrup tastes the best, and that syrup is classified as Grade B. Most of our syrup would be classified as Grade B or as a Dark Grade A Amber. There may be some sugar settling at the bottoms of the containers, we assure you it is safe, though there is a color difference, it is simply the collection of minerals from the sap and crystalized syrup that sinks to the bottom of some finished containers of syrup.
