Description: 1-pound Roots to plantThe Jerusalem artichoke (Helianthus tuberosus).Also called sunroot, sunchoke, wild sunflower, topinambur, or earth apple, is a species of sunflower native to central North America. It is grown widely across the temperate zone for its tuber, which is used as a root vegetable. The flowers are yellow and produced in capitate flowerheads, small sunflowers. Our plants grow about 10 to 15 feet tall here in Wisconsin. We start to harvest in fall and dig fresh as they are ordered. We grow all organically in our gardens. We eat all of our garden produce and want to make sure no chemicals are used on our property. The tubers grow close to that stalk which is an advantage at harvest time.The tubers are often elongated and uneven, typically about 3 to 5 inches long, but they vary in size. They resemble a ginger root in appearance, with a crisp and crunchy texture when raw. Sunchoke tubers can be planted in the garden as early as 2 to 3 weeks before the average last frost date in spring. They are best planted as soon as possible after receiving your order. In warm-winter regions, sunchokes can be planted in winter. Sunchokes require 110 to 150 days to reach harvest.Sunchokes will survive a hard freeze if protected by a layer of soil or mulch. Tubers rapidly spread and divide but can be controlled by root barriers.The name Jerusalem artichoke is a misnomer: the plant is not related to the artichoke, though the sunchoke’s flavor may be reminiscent of the artichoke.Plant sunchokes in full sun. The sunchoke prefers loose, well-drained soil but will grow almost anywhere. Plant sunchoke tubers 2 to 6 inches deep, 12 to 18 inches apart. Space rows 36 inches apart.
