IRISH BREAKFAST LOOSE TEA:The Irish prefer a full bodied tea that if brewed long enough one could almost stand their spoon upright. The stength is achieved by this robust blend of Kenya and Assam. The grade of this tea is CTC - cut, torn, curled. Tea leaves were processed through a machine that cut, torn and curled the leaves into tiny balls. This "mash" ferments very quickly after which firing takes place to "lock in" the flavor and produce superb color and very full bodied flavor. Excellent in the early morning. HOT TEA: Put a slightly heaping tsp of loose tea for each 8oz of freshly boiled water. Steep 3-7 minutes. Add milk and sugar to your taste. ICED TEA: 6 slightly heaping tsp of loose tea for each 1QT iced tea. Pour 1 1/4 cup boiling water on tea. Steep 5 minutes. Quarter fill serving pitcher with cold water. Pour into pitcher straining tea. Add ice.
