Description: Inca berry, also known as husk cherry, golden berry and ground cherry. Inca berries, or Peruvian Ground cherry are in my opinion the supreme variety of ground cherries, tangy but sweet and excellent in smoothies! Growing information: Ground cherries should be started indoors 6 weeks before planting out/last frost date. They are small seedlings that can take some time to germinate, but then quickly take off and outgrow their grower pots. Plants are indeterminate with a wide spreading habit, growing anywhere from 12-36″ tall and equally wide. Amend soil with compost, and benefits from some fertilizer early on. In our test garden with irrigation these grew to my chest, and as wide as my arms! Ground cherries are members of the family Physalis, which is the same genus as the tomatillo. It grows bushy, tomato-like plants with fruits encased in a papery husk called a calyx. The ground cherry originates in South/Central America and is known by a few different names: wintercherry, husk cherry, cape gooseberry, poha, strawberry tomato and pineapple tomatillo. Ground cherries should not be picked off the bush, instead ripe berries are gathered from the ground below, where they drop once ripe. Be mindful of planting to consider where the berries will drop. The papery calyx around the berry must be removed before consumption. If you find the berries inside to be a bit on the green side, leave them in a shallow container, uncovered for 1 – 5 days, in warm, dry place, to ripen. Ground cherries can be stored in a well-ventilated, cool place with their calyx attached for 3 to 6 months with good results. Make sure they are single layer and dry. With their calyx removed, they can be stored refrigerated for weeks. They freeze very well for year-round use and work great in smoothies. To freeze, remove husk, rinse, pat dry and freeze on cookie sheet in 1 layer. When frozen, loosen and store in ziplock, freezer weight bag. Frozen ground cherries can be used like fresh in any cooked application. They can also be used to make jam, and dehydrated as a snack.
